Calling All Cookie Monsters!

With the holidays just around the corner, BSPT has some yummy cookies recipes from chef Maria Zoitas, creator of “Maria’s Homemade” line of prepared food sold exclusively at Westside Market NYC. These cookies are perfect for your office holiday party, family gatherings, as an activity with the kids over winter break, or just simply because sometimes the best remedy for stress is a cookie. Enjoy!

Sugar Cookies

This simple recipe is perfect to do with the kids! You can even add some festive icing or sprinkles to the top of the baked cookies!

INGREDIENTS

  • ·         ½ Cup soft butter
  • ·         ¾ Cup white sugar
  • ·         1 Egg
  • ·         1 ¼  Cups all-purpose flour
  • ·         ½  Teaspoon baking soda
  • ·         ½ Teaspoon baking powder
  • ·         ½ Teaspoon vanilla extract


DIRECTIONS

1.       Preheat oven to 375⁰F.

2.       In a small bowl, mix flour, baking soda, and baking powder. Set aside.

3.       In a medium bowl, cream the butter and sugar until smooth. Beat in the egg and vanilla extract and gradually blend in the ingredients from the small bowl.

4.       Use an ice-cream scooper to scoop out and shape the dough into balls.

5.       Place the balls 2 inches apart on an 18×9 inch sheet pan, and then flatten them until they are ¼ inch thick.

6.       Place the sheet pan into the preheated oven and bake for 8-10 minutes.

7.       Remove cookies from oven and place them on a wire rack to cool off.

Oatmeal Raisin Cookies

These healthy cookies will hit the spot! Okay, maybe they’re not exactly healthy, but raisins and oaks are a great balance with the sugar and butter!

INGREDIENTS

  • ·         1 Stick softened butter
  • ·         1 Egg
  • ·         1 Cup sugar
  • ·         1 Cup all-purpose flour
  • ·         ½ Cup dark seedless raisins
  • ·         ½ Cup flat rolled instant oatmeal


DIRECTIONS

1.       Preheat oven to 350⁰F.

2.       Mix the butter and sugar together until well combined. Add the egg and mix well.

3.       Stir in flour, then dark raisins and oatmeal.

4.       Use an ice-cream scooper to scoop out and shape the dough into balls.

5.       Place the balls 2 inches apart on an 18×9 inch sheet pan, and then flatten them until they are ¼ inch thick.

6.       Place the sheet pan into the preheated oven and bake for 8-10 minutes.

7.       Remove cookies from oven and place them on a wire rack to cool off.

English Toffee Crunch Cookies

And for the ultimate decedent cookies…English Toffee Crunch Cookies!! Candy AND cookies! What more could you ask for!?

INGREDIENTS

  • ·         2 Sticks softened unsalted butter
  • ·         1 Cup granulated sugar
  • ·         1 Cup brown sugar
  • ·         2 Eggs
  • ·         2 ½ Cups all-purpose flour
  • ·         1 Teaspoon baking soda
  • ·         2 Cups English Toffee baking bits


DIRECTIONS

1.       Preheat oven to 350⁰F for 10 minutes.

2.       In an electric mixer bowl, add sugar and butter and beat. Mix in the rest of the ingredients and combine thoroughly.

3.       Use an ice-cream scooper to scoop out and shape the dough into balls.

4.       Place the balls 2 inches apart on an 18×9 inch sheet pan, and then flatten them until they are ¼ inch thick.

5.       Place the sheet pan into the preheated oven and bake for 10-12 minutes.

6.       Remove cookies from oven and place them on a wire rack to cool off.
